Just in time for Turkey Day (leftovers!)

Here's the perfect answer for that leftover turkey, from our book Compliments of the Chef: A recipe for Turkey Meatloaf from Morton's restaurant.


Enjoy!
Ingredients:
5 lb ground white turkey meat            
2 carrots, diced                                  
1 white onion, diced                           
5 celery stalks, diced                           
2 eggs                                                   
1 Tbs garlic, minced                            
1 Tbs parsley, chopped                        
1 Tbs Worcestershire sauce
1 tsp salt
1 tsp pepper   
Pinch paprika
Pinch cayenne pepper
Pinch Herbs of Provence
1-1/2 cup bread crumbs
1. Preheat oven to 450. Saute the diced vegetables until tender. Let cool.
2. Mix the cooked vegetables with the turkey. Add the eggs, garlic, parsley, salt, pepper, paprika, cayenne pepper, Herbs of Provence and Worcestershire sauce. Add bread crumbs.
3. Form into a big loaf and place on a baking sheet. Bake at 450 for 45 minutes or 1 hour - until nice and brown. Drizzle with sauce.
Serves 12
(We use homemade sauce from Veal bones, but Lawry's Au Jus works well.)
